About Kaju Katli
Kaju refers to cashews and katli refers to thin slices. This kaju katli is prepared by cutting it into diamond shapes. Whenever there is any occasion in my school my first gift is a box of kaju katli which is my favourite. This sweet is very famous during Navaratri, Eid, Diwali, etc, and one of the most popular sweets that is sold in maximum quantity in any sweet shop. If you prepare this sweet at home it is preservative-free and free from various artificial agents. Here is my recipe, I have excluded the silver foil which is optional. Last but not least if you want to have your homemade kaju katli recipe then have patience and try this recipe by devoting some time.
Ingredients
* 200 gm of
unsalted, unroasted whole cashews.
* ½ cup of sugar
* Milk powder as
required
* Saffron and rose
petals are optional
* Dry fruits
like almonds, cranberries, black raisins, walnuts, pista etc.
* Ghee as required which is also optional
How to make a kaju katli recipe?
Here in my blog, I have shared the details step-by-step recipe of kaju katli. Though I prepared it for the first time still it came out well with a good texture. Very happy to share my recipe with you all.
Preparation of
Cashew Powder
Step 1) Firstly I have taken 200 gms of kaju which is unsalted and
unroasted or you can take 1 cup of fresh cashews. See that the quality of the
cashews is of premium and fresh quality. Do not use frozen or refrigerated
cashews as they will release moisture.
Step 2) Now place the whole cashews in the mixture grinder and blend it to a powdered form. Do not over-blend it as it will retain moisture.
Step 3) Then place the powdered cashew into a bowl and keep it aside.
Arranging of The Dry Fruits
Step 4) Here I have taken a few dry fruits like almonds,
black raisins, cranberries, walnuts, and pista.
Step 5) Then I have chopped the dry fruits with the help of a knife and kept them aside.
Preparation of The Cashew Dough
Step 6) Firstly take
a kadai or a nonstick pan and add ½ cup of sugar. Try to use a nonstick pan as
it prevents it from sticking.
Step 7) Then add 4 to 5 tablespoons of water or as required and prepare the sugar syrup by switching the induction on.
Step 8) Then stir the mixture properly and make the proper sugar syrup.
Step 9) Add the entire cashew powder when the sugar gets dissolved.
Step 10) Here in my mixture I have added one tablespoon of ghee which is optional. You can avoid it as the cashew itself will release oil and it will become too much oily.
Step 11) Add the chopped dry fruits into the cashew dough and stir it continuously so that it does not stick from the bottom.
Step 12) You can spread some of the milk powder over the dough which is optional.
Step 13) Do not knead it for longer as the cashew dough will release oil from within.
Step 14) Place
the dough on a plate keep it aside and allow
it to become cool or
at room temperature.
Step 15) With the help of a rolling pin press the dough on all sides to make it smooth after it gets cool.
Final Preparation of Kaju Katli
Step 16) Take a knife and cut the kaju katli into diamond pieces.
Step 17) Then place every piece of Kaju katli on a separate plate. Do not make the pieces thick as kaju katli is prepared in thin slices.
Step 18) Kaju katli is ready here and now you can serve it with cranberries on toppings, saffron etc which is optional.
Step 19) You can store this kaju katli in an airtight container and serve it whenever required.
Step 20) Serve the tasty, mouth-watering, mouth-melting kaju katli on any occasion, or even can be served as a dessert.
Expert Tips and Advice
1) Selection
of proper cashews:- The cashews that are used in the kaju katli recipe must be of proper quality
and not roasted. Unsalted cashews
must be used and of proper quality which is
fresh. Do not use stale and old cashews as they will smell differently.
2) Blend or grind
the cashew properly:- Grind the
cashew in a few quantities so that
it easily becomes powdered form. Do not overground the cashew as it will release fats which will
make the powdered cashew sticky.
3) Attractive
presentation:- Prepare the kaju katli recipe with various chopped
colorful dry fruits and even
you can use saffron, and rose petals which are
optional. Try to be innovative
while preparing recipes that attract people.
4) Use of
ghee:- Here in my recipe I have used ghee for extra taste and aroma which is
optional.
5) Cutting in
proper shapes:- Cut the kaju katli in proper diamond shape and thin
texture. Do not make it over thick.
6) Storage:- You can keep the kaju katli in an airtight container for storing it for a few days. If you want to keep it for a longer period try to refrigerate it.

Yes, you can use khoya or mawa while preparing the kaju katli recipe but this is optional.

Yes, you can use jaggery instead of sugar syrup if you are health-conscious.
If my dough becomes too sticky then what should I do?
You can add more cashew powder if you think the dough becomes too sticky.
Can I make vegan kaju katli?
Yes, you can use vegan kaju katli by using vegan butter and sweetener which is vegan-friendly.
What will I do if my kaju katli becomes too shiny?
If you overcook the dough then it will release fat which will make the kaju barfi shiny. From the very next time do not overcook the dough.
What will I use if I don’t have butter paper?
You can use aluminum foil if you don’t have the butter paper.
