Various summer drink recipes are there, but here I have chosen to prepare a Raw mango drink which is popularly known as ‘Aam pora’ in Bengali traditional style. ‘Aam pora’ drink is prepared with roasted mangoes which give a smoky, tangy flavor. Ingredients
* 1 green raw mango, medium size
* ½ tablespoon cumin powder
* 1 tablespoon sugar
* 1 tablespoon black salt
* ½ tablespoon jaljeera powder
* Chilled water as required
* optional Ice cubes
* 2 mint leaves
How to Prepare Raw Mango Drink or Aam Pora Recipe?
Step 1) First, take a raw green mango, wash it off with water, and keep it aside in a bowl.
Step 2) Roast the green mango into a direct flame and heat it until the outer layer becomes black and charred.
Step 3) Change the side of the mango to get roasted in direct flame. Heat it until the other side of the mango gets charred and black.
Step 4) After the mango is roasted, let it allow to cool in a bowl with water at normal temperature.
Step 5) Remove by peeling the outer starred layer of the mango with your hand.
Step 6) Extract the pulp of mango with your hand and keep it in a bowl.
Step 7) Squeeze the mango in such a way that all the pulp is extracted properly.
Step 8) This pulp can be kept in an airtight container for a week
Step 9) In a bowl, add the pulp, add black salt powder, and whisk it properly.
Step10) Add sugar as required, add cumin powder, and mix it thoroughly.
Step11) Add jaljeera powder and whisk the pulp by adding additional water into it.
Step 12) Mix and blend the ingredients properly, Your aam pora drink is ready. Pour into the serving glasses and serve with ice cubes.

1) Roasting mangoes:- Charr the mangoes on direct heat flame and heat it until the layer of the mangoes becomes black and the flesh becomes soft.
2) Cool and then peel:- After roasting the mangoes, cool it completely. Once it is cool peel off the skin properly.
3) Storing:- You can store the pulp in an airtight container for more than a week.
4) Serving:- While serving the raw mango drink see that it is cool and let it come to room temperature after removing it from the refrigerator.
5) Garnishing:- Garnish the drink with mint leaves, pudina, or chopped cilantro before serving.
6) Balance the flavor properly:- Add salt, sugar, cumin powder, and jaljeera powder as required and try to maintain balance between them. Adjust as per your taste and preference.
