 What is pav bhaji?

A popular Indian street food originating from Mumbai is pav bhaji. Pav here means bread rolls whereas bhaji means gravy style of mixed vegetables which are smashed. Pav bhaji recipe is very popular in the streets and restaurants of Mumbai. Now, the most exciting flavor and tempting taste of pav bhaji rises when pav bhaji masala is mixed into it. This pav bhaji masala is a famous Maharashtrian spice that is easily available in both online and offline stores. During 1800s this recipe came into existence for the cotton mill workers who used to work for long hours. This recipe was the easiest and quickest meal to prepare for them during those times. There are different variations of pav bhaji. Paneer pav bhaji, no onion no garlic pav bhaji, jain pav bhaji, beetroot pav bhaji, mini pav bhaji burger, chinese pav bhaji, kada pav bhaji, etc. In the case of khada pav bhaji, the vegetables are not smashed, kathiyawadi pav bhaji with some local spices, etc.

Ingredients

*Butter or ghee 2 to 3 tablespoons

*1/3 cup of chopped

*½ teaspoon of cumin powder

*2 carrots

*1 cup finely chopped opinion

*½ teaspoon turmeric powder

*½ teaspoons red chilli powder

*8 to 10 garlic, ginger

*3 medium size potatoes

*2 tablespoons of pav bhaji masala

*Salt as required

*Water as required

*1 lemon or lime

*3 pav rolls

 Ingredients used to make pav bhaji

1) Mixed vegetables:- I have made this recipe in a homely way with potatoes, beans, and carrots to become more nutritious.

2) Pav bhaji masala:- You can use either homemade pav bhaji masala or you can purchase it from stores or online. Here I have used homemade pav bhaji masala.

3) Butter:- You can use any butter of your choice. My preference is amul butter due to its flavor and taste. But here I have used ghee instead of butter.

4) Pav:- Here I purchased this bread roll i.e. pav from the nearby store. If you want to make healthy pav replace the all-purpose flour with wheat flour to make it more healthy.

Procedures to make Pav Bhaji

Step 1) Chopping of carrots:- First take 2 carrots cut and chop them in cubes, rinse them thoroughly, and keep them aside.

Step 2) Potatoes and beans:- Take 3 medium-sized potatoes finely chopped in cubes and 1/3 cup of chopped beans, rinse it thoroughly, and keep it aside. Various other vegetables can be used to make it more healthy and nutritious like broccoli, cabbage, cauliflower, zucchini, etc.

Step 3) Take a pressure cooker:- Place the chopped carrots in a clean pressure cooker. You can also add green peas which is optional.

Step 4) Add all the veggies:- Add all the other vegetables in the cooker like potatoes, beans, etc.

Step 5) Pour water:- Take 2.5 cups of water and pour it over the mixed vegetables in the cooker.

Step 6) Onion, garlic, ginger:- Take 1 cup of finely chopped onion, 8 to 10 garlic and ginger as required.

Step 7) Boil the vegetables:- Boil the vegetables for 12 minutes and see that they whistle 5 to 6 times. Open the lid of the pressure cooker and see that the vegetables are boiled.

Step 8) Take a frying pan to prepare the bhaji:- Add 1 spoon of white oil, and add the chopped garlic on medium heat.

Step 9) Add onion and garlic:- After the garlic becomes medium brown add chopped onion and ginger to it. Fry it until it becomes brown.

Step 10) Addition of tomatoes:- Add 1 chopped tomato to the mixture stir it thoroughly and fry it until it becomes smooth.

Step 11) Cumin, jeera powder:- Then add the cumin powder and jeera powder into the mixture and stir it thoroughly.

Step 12) Boiled vegetables:- Add the boiled vegetables into this mixture smash the vegetables smoothly and make it a thick paste. Pour the remaining water or stock which is left after boiling the vegetables since it contains nutritional value.

Step 13) Bhaji is ready:- For a smooth mixture smash the bhaji more. Keep on stirring and simmer for 10 minutes. The consistency must be neither thick nor thin. Add salt, sugar pav bhaji masala, and red chilli powder. Then add 1 tablespoon of ghee and the bhaji is ready.

Step 14) Cut the bread roll:- Take the pav and cut it into equal pieces in halves.

 Step 15) Take a tawa:- Put butter or ghee on the tawa.

Step 16) Pav bhaji masala:- As the butter or ghee begins to melt add pav bhaji masala.

Step 17) Mix the masala:- Mix the masala very well in the tawa.

Step 18) Place the pav:- Then place the pav on the butter or ghee. Rotate the pav with the spatula so that the pav absorbs the butter or ghee and ground spices and becomes a little crispy.

Step 19) Pav bhaji is ready to serve:- Transfer the pav to the plate and serve with bhaji topped with butter or ghee and a side of finely chopped onion, tomatoes, lemon, etc.

1) How to get red or orange colour in pav bhaji?

Ans. The restaurant often uses food colour in the bhaji recipe. But you can use normal turmeric Kashmiri red chili to bring little colour.

2) Is pav bhaji healthy?

Ans. Yes, pav bhaji becomes healthy if you can prepare it at home by using less butter, and oil. Also, you have to use wheat flour instead of all-purpose flour to prepare the pav.

3) What can I use instead of pav bhaji masala?

Ans. You can use garam masala, or amchur powder instead of pav bhaji masala.

4) What vegetables can I add?

Ans. You can add any vegetables like cauliflower, capsicum, french beans, carrots, and potatoes as per your choice. You can also add green leafy vegetables, broccoli, etc.
