colored water and powders to each other. Varieties of food are served during
this gathering of Holi. The most popular food for holi festival is gujiya, dahi
balla, malpua, papri chaat, thandai, lassi, etc. Here in this blog a fresh
refreshing delightful lassi that is not only served in Holi but also a healthy
drink for summer. This Holi special lassi is made with various dry fruits,
cardamom powder, ice cubes, etc. Here I have mentioned the step-by-step
procedures for preparing the Holi special lassi.

Brief Description of Lassi
A probiotic refreshing drink served mainly during
summer is the lassi which is prepared mainly with curd or yogurt, where sugar,
salt, spices, and dry fruits are used. This lassi is very popular in North India.
If you want to prepare the lassi traditionally use the wooden churner to whisk or blend the curd. There are various variations of lassi which are mango lassi,
malai lassi, strawberry lassi, dry fruit lassi, rose lassi, etc. Here I have
prepared dry fruit lassi with ice cubes, which is served after playing Holi
with cousins and friends.
Ingredients
* 2 cups cold and fresh yogurt or curd
* 1 cup of water or milk
* 1 teaspoon of cardamom powder
* Saffron strands optional
* 8 ice cubes or as required
* 5 tablespoon of sugar
* 1 to 2 tablespoons of chopped cashew nuts,
raisins, mango pulp candy, dates, and a few pomegranate seeds for serving.
Procedures to make sweet dry fruits lassi
Step 1) Green cardamoms to be crushed:- Take 10
pieces of cardamom and crush them to the powder form.
Step 3) Yogurt or curd:- Take 2 tablespoons of yogurt or curd in a bowl. The yogurt must be fresh and homemade.
Step 5) Smooth curd:- The curd must be whisked in such a way that it becomes smooth in its texture, before adding other ingredients.
Step 6) Adding sugar and water:- Add 5 to 6
tablespoons of sugar and 1 cup of cold water or milk depending upon the
consistency. If you want light weight go for water, if you want heavy weight go
for milk.
Step 7) Blend the curd:- Now thoroughly blend the curd with the help of the churner until the sugar dissolves in it. A layer will appear on the top of the curd or yogurt after a continuous blend or whisk with the churner.
Step 8) Layer of bubbles:- On constant whisking the curd becomes smooth and layers of bubbles appear on the top.
Step 9) Dry fruits:- On a plate or bowl take a few dry fruits like raisins, mango pulp candy, dates, etc, and keep them aside.
Step 10) Adding cardamom powder:- Pour the lassi into a glass, add the crushed green cardamom powder and then add dry fruit one after the other.
Step 11) Serving the lassi:- Add a few pomegranate seeds to the tall glass of lassies for its bright beautiful color add some ice cubes and serve your ready Holi special. You can also garnish with saffron strands or chopped nuts etc.
* You can store the leftover lassi for a maximum of
2 days without adding ice cubes.
* You can serve this lassi any time after a meal.
* For lightweight lassi you can add more water but
for heavy-weight consistency do not use water, rather add the curd directly
with the dry fruits.
* The curd used to make lassi must be fresh and
cold. Do not use curd which has already become too sour.
* For preparing lassi you can directly use sugar, if
any health issue arrives use jaggery or palm sugar instead of normal sugar.
* For preparing the lassi always try to use whole
milk yogurt which works best for lassi preparation.
* Various flavors can be added to make different
variations of lassi like mango flavor, strawberry, rose flavor, etc.
Types of Lassi
There are different variation versions of lassi by adding different flavors. They are:
Masala lassi:- To prepare this masala lassi you can
add mint leaves, ginger, etc.
Rose lassi:- Rose lassi is prepared with rose syrup,
rose petals, and condensed milk.
Salty lassi:- This salty lassi is prepared with
cumin powder, mint leaves, black salt, etc.

1) Are lassi always sweet in taste?
Ans. No, lassi is of a different taste. I have mentioned the different variations of lassi, as per the preference of the individual.
2) Is Lassi good or bad for health?
Ans. Lassi is very good for health due to the presence of probiotics in yogurt or curd. But see that you do not use too much sugar in lassi. Lassi also improves the gut health.
3) For how many days I can refrigerate the lassi?
Ans. You can not store lassi for more than 2 days as it may taste different.
4) How to make lassi a little lighter?
Ans. As I have mentioned in the recipe, after whisking or blending if you find your lassi a little thicker, you can add some water to it.
5) How many flavors can I add to the lassi?
Ans. Depending upon the variation of the lassi type, you can add flavor. For mango lassi add mango pulp, for pineapple lassi add pineapple, for strawberry lassi add strawberry, etc.
