 Ingredients

* 200 gms of baby corn

* 4 tablespoons of corn flour

* 3 tablespoons of all-purpose flour

* 1/3 teaspoon of black pepper powder

* 1/3 teaspoon of salt

* 4 tablespoon of water

* 5 to 6 garlic cloves

* 2 inch of chopped grated ginger

* 1 small capsicum finely chopped  

* ½ medium-sized yellow bell pepper

* ½ medium size red bell pepper

* ½ medium size onion

* Soy sauce

* Tomato sauce

* oil for frying

* Green chilli as required

* Salt as required

* Coriander leaves for garnishing

*Spring onion for garnishing (optional)  

Procedures to make chilli baby corn

Step 1:- Rinse 200 gms of baby corn in water and rinse it thoroughly. Drain the water and keep it aside on a plate until it becomes dry. As per your choice cut the baby corn into pieces.

Step 2:- To make the batter take 4 tablespoons of all-purpose flour, 1/3rd teaspoon of black pepper, 1/3rd teaspoon of salt, and 4 tablespoons of water and mix it thoroughly in a bowl.

Step 3:- Mix the ingredients and make a semi-thick batter.

Step 4:- To prepare the chilli baby corn sauce, take finely chopped 5 to 6 medium-sized garlic cloves, 2 inches of ginger sliced and chopped, small capsicum, green bell pepper, ½ yellow bell pepper, ½ red bell pepper, spring onion as per your choice which is optional and ½ onion finely chopped.

Step 5:- Heat some water in a bowl and drop the chopped baby corn within seconds pick it up from the water, drain it, and keep it aside on a plate and make it dry.

Step 6:- Then dip the baby corn into the batter and coat it very nicely so that the excess batter remains in the bowl and the corn gets boiled by the batter.

Step 7:- Heat the white oil in the frying pan and gently place the batter-coated baby corn in the hot oil.

Step 8:- With the help of the slotted spoon turn over the pieces thoroughly as and when required.

Step 9:- Continue to turn the pieces until the batter-coated baby corn turns golden brown.

Step 10:- Then drain the excess oil with the slotted spoon and keep the fried baby corn aside on the plate on top of the paper towel to absorb excess oil.

Step 11:- Now for preparing the sauce, keep 1 tablespoon of oil in the new pan, and heat it. Stir it thoroughly after adding garlic, ginger, and onion.

Step 12:- Add the green capsicum, yellow bell pepper, and red bell peppers and mix them thoroughly.

Step 13:- Fry the bell peppers, and the mixture thoroughly and toss it very nicely.

Step 14:- Then add some soya sauce stir it thoroughly and make a paste out of it.

Step 15:- Add some tomato sauce, and schezwan sauce as per taste and make a semi-thick mixture.

Step 16:- Now add the fried baby corn to the mixture of sauce and tos it very well and gently mix.

Step 17:- Then serve this hot and crispy chilli baby corn as an appetizer on a plate.
