An alluring and most captivating dish which attracts the interest of the toddlers is the famous recipe palak puri. Palak puri is a very healthy Indian dish which is mainly made with yogurt, all purpose flour, spinach .The tempting green colour of the puri makes it indifferent from the normal puris and makes the weekend more exciting. This palak puri recipe can be served with raita or any curry or aloo sabzi etc. Making of palak puri is very easy and is very helpful for kids who do not like to eat spinach. The vegetable puree is spinach puree is added to the dough to give the colourful look.This recipe is best to serve during the breakfast at the weekends.

Procedures to make palak puri /palak puri recipe

 

Step1) Extracting spinach puree:- Firstly, rinse the palak leaves in fresh water and drain all water with strainer.Use the fresh baby spinach leaves and 100gms of quantity.

Then in 4 cups of hot water put the spinach leaves and blanch it and then again put it in the cold water before placing the leaves in the blender or mixer grinder. Then 1 tablespoon of chopped ginger and pinch of green chillies which are chopped to make the paste or smooth puree of spinach. Do not add water to it.

Step2) Making the dough of palak puri:- Take wheat flour or all purpose flour in a bowl and add asafoetida i,e hing, a pinch , ½ teaspoon of ajwain, and salt as per taste. Add the spinach puree, yogurt and water as required in the dough.Yogurt is used so as to make more fluppy and soft. Also add 2 tablespoons of white oil and knead the dough perfectly, keep aside and rest it for 20mins after covering it with a cloth.

Step3) Making small and medium sized balls from the dough:- Take the dough and then divide them into small and medium sized balls. Roll the ball completely and very smoothly and add very drops of oil. Then roll it in a flatten way ,do not make it very thick or thin.

Step4) Fry the palak puri:- Take a pan or kadai and heat the oil. Make the oil to medium heat, then slid the puri to the hot oil for frying. Do not over fry it as the green colour will change. Turn the puri once or twice while frying the puri and with the slotted spoon drain the excess oil present in it. Then after removing from the kadai place the palak puri on paper towels to remove the excess oil which is soaked in the paper towels. Serve it hot with potato curry or chana masala or any curry.

        Ingredients 

 

1) For making the puree:-

 > 100gms of spinach

> 4 cup of boiling water.

> Ginger finally chopped(1 teaspoon)

> Geen chilli as required

> Cold water (2cup)

 

2) For making the puri

> 1 pinch of asafoetida is hing

> water as required.

> Use sunflower or soyabean oil as required

> ½ teaspoon of ajwain

> 2 tablespoon of yogurt.

> 2 cups of wheat flour or all purpose flour

>Salt as required.

 

                 Variations

 

1) You can add finely chopped spinach instead of spinach puree.

2) You can add the beetroot puree in the dough to make the beetroot puri

3) You can also use besan to make the palak puri.

4) Chaat masala, lemon juice, can also be added in the dough.

FAQs 

How long you can store the spinach dough?

Ans. You can store the dough in the fridge for 3 to 5 days in an air-tight container.When you will prepare the palak puri, take out the dough from the fridge and rest in normal temperature for 10mins.Then continue the next step and procedures.

How you can make soft , fluppy puri ?

Ans. While kneading the dough, knead it very smoothly and add oil to the dough to make it softer for long time. Presence of yogurt in the puri also makes it fluppy and also its texture changes and gives a spongy look.

Can you use frozen spinach ?

Ans. Yes, you can use. But, I always prefer fresh baby spinach leaves for better taste, texture and also for great colour.

Can you use milk instead of yogurt ?

Ans. No, milk can not be the option. If you do not have yogurt omit this step as the presence of oil in the dough well itself make it soft while kneading the dough.

Can you use sooji instead of maida ?

Ans. Do not use sooji as replacement of maida .Instead, take little quantity of sooji along with flour to make the puri more crispy and khasta.
