A mouth-watering delicious recipe for winter season which is served mainly as a dessert is the Nolen Gurer Payesh. This milk recipe is famous for Bengalis and is served mainly during any occasion like birthday etc. The nolen gur which is also known as the date palm jaggery is extracted from the sap of date trees. This nolen gur has very unique taste and gives a deep caramel like flour and is extracted and tapped in the colder months. This milk recipe which is the nolen gurer payesh also khown as kheer recipe is usually made in the family for generation after generation. Thus this milk recipe is made with fresh date palm jaggery and rice. Nolen gur or palm jaggery is used to make pitha, payesh and any kind of dessert and is wildly prepared during Sankranti which is celebrated in the month of January.
Today, I am blogging this milk recipe of Nolen gurer Payesh which requires a lot of patience to prepare in order to make the correct texture. In this milk recipe , the milk is boiled for a longer period of time, so heavy pan or kadai must be used so it does not get stuck or burnt from bottom.

* Nolen Gur :- This date palm jaggery is used to make this
milk recipe.
* Payesh :- This is also called sweet rice pudding also
known as kheer.
* Bay leaves :- The bay leaves are used to prepare this milk
recipe for its aroma.
* Gobind Bhog Rice :- This rice is used to make the payesh
or milk pudding.
* Milk :- Adequate milk is used to prepare this recipe.
* Raisins :- This are spreaded over the payesh before
serving.
Step1) Firstly take 1/4th cup of gobing bhog rice
and rinse it thoroughly as required. Then soak the rise in water for 15 – 20 minutes.
Step2) Then take ½ cup of date palm jaggery and make into small pieces.
Step3) Take a heavy pan or kadai and take 1 litre of milk in
it and heat it . Stir it continuously as required. Boil the milk for 10 minutes.
Step4) As the milk thickens after 10 minutes of boiling, then add the rice to the milk after draining from water.
Step6) Stir the milk continuously so that it does not get
burnt from bottom. As the rice gets cooked in low heat, the milk will reduce and
will become thik.
Step7) Once the rice grains are cooked and the milk becomes thickened, switch off the heat. Then add the dry fruit like almond, pistachios, raisins etc. Dry fruits are optional as per the choice of the person.
Step8) Then add the chopped date jaggery into the milk and
stir it very well. Mix it very well until the jaggery gets dissolved in it.
Then serve this milk recipe or nolen gurer payesh when it comes to the normal temperature.
Tips for this Nolen Gurer Pyesh or Milk Recipe or Kheer Recipe :-
1) In my recipe I have used gobind bhog rice for making this
recipe. You can use Basmati rice which
can be a great alternative to it.
2) For making this milk recipe you can also use milk powder to bring the creamy texture to it
very quickly.
3) Do not over wash the rice as it well loose it fragnance.
Excess washing removes the starch from the rice.
4) Do not over heat the milk. Boil and stir it at medium
heat to avoid the milk stucking at the bottom.
5) See that your payesh does not get burnt, stir it
continuously and have patience to make it. It is well prepared if you take your
time and make it.
6) Once you keep your flame off, add the jaggery if your
rice is cooked and milk become thickened. Notice properly whether your flame is
off or not.
7) Always use pure whole fat milk to make this milk recipe. Using
of this kind of milk will make the texture more creamy and yummy.
8) Always use fresh milk instead of milk kept in
refrigerator , as it can curdle.
9) Don’t use steel container, instead use heavy kadai or pan
for making this dish.
10) You can also keep it in the refrigerator after preparing
for 1-2 days in an airtight container.

FAQs
1) Can I use any other variety of rice instead of gobind bhog or Basmati rice ?
You can use sona masoori rice and also kolam rice. But the best flavor comes from gobind bhog rice.
2) Can I use milk powder instead of raw liquid milk ?
Do not use only milk powder. Use the powder along with the liquid milk in order to make it more thicker and creamiest.
3) Can I use dates in the nolen gurer payesh ?
Yes, dates can be considered as dry fruit. Any dry fruit can be used like almonds, cashews, pistachios, raisins etc as per yours taste.
